香腸滾切機用於割斷蒸煮后的天然和人造腸衣的腸類制品的扭結。主要功能是通過滾筒的滾動，使筒內的勾刀把扭結腸類產品從扭結的節處切斷。根據其工作原理，香腸最好有一定長度（重量），特別短的香腸切割效果不理想。其對香腸的彎曲要求則不特別嚴格。該設備不對所切割的香腸根數計數，也不能對香腸成串的切割。
　　Drum sausage cutting machine is used to cut sausage twists with both natural and man-made casing sausages.  A large number of hooks with knifes are fixed inside a rotating drum. The  sausages are hooked and twists are cut apart during drum rotating.  Because the cutting takes place by gravity, sausages being cut should have certain length and weight. Otherwise it is not easy to get good result.  Bent sausages can also be cut.  It can not count the number and can not cut in a set string.
