直到上世紀九十年代中期，意大利科學家Dini A在1994年首次系統地得出了瑪卡干根中的化學組成成份：蛋白質含量為10%以上（胡寧湖畔的瑪卡品種的蛋白質含量超過14%），59%的碳水化合物；8.5%的纖維，內含豐富的鋅、鈣、鐵、鈦、銣、鉀、鈉、銅、錳、鎂、鍶、磷、碘等礦物質，並含有維生素C、B1、B2、B6、A、E、B12、B5 ，脂肪含量不高但其中多為不飽和脂肪酸，亞油酸和亞麻酸的含量達53%以上，天然活性成份包括生物碱、芥子油苷及其分解產物異硫氰酸苄酯、甾醇、多酚類物質等。
